Sauteed Pork and Cheddar Studded Wild Rice

Yield: 4 servings

Preparation Time: 10 minutes; Cooking Time: 30 minutes



Season meat with cinnamon. Saute meat in hot oil in 10- inch skillet over medium high heat, about 5 minutes per side. Remove from skillet; set aside.

Add onion, cook 3 to 5 minutes or until onion is tender. Add apple juice and rice seasoning packet; bring to a broil. Stir in rice and cranberries. Cover; remove from heat. Let stand 7 minutes.

Stir in 1 cup cheese. Arrange meat over rice; sprinkle meat with remaining 1/2 cup cheese. Cover; heat over medium heat 3 to 5 minutes or until cheese is melted.

Variation: Substitute turkey tenderloin slices for pork.
